Ich definiere in meinem Cups die ganzen Drucker und mache dann je
nach Ort einfach ein
lpoptions -d <Drucker>

und danach kommt 

cat foo | a2ps

genau richtig raus. 

Was fehlt Dir denn noch ausserdem?
